One-pot taco casserole is an easy and delicious dish where you can use leftovers and really any veggies you want. If you have the chicken or rice cooked this is a one-pot meal. I usually try to make this when we have rice and chicken that I need to use up. Have you had those days where you can’t think of anything to make or you are just too busy? One-pot dishes are great in these times. It is easy for a quick meal when you need something that can be put together fast.

A Quick No Think Meal
With having two part-time jobs (not including this blog) and raising a family of 8, I really don’t have time to always think about making an elaborate meal. When I have time, I like spending time in the kitchen, but when I have a class to teach or have to go to the hospital to complete a prescreen, I don’t really have enough time or energy to think of something grand to make. This meal is easy to assemble in a 9×13 pan and placed straight into the oven. Have leftovers? The taco casserole is also a nice lunch to take to work or have for leftovers. My kids all love this taco casserole.
Ways To Eat The Taco Casserole
What are some ways you would like to serve this? For instance, I think this taco casserole is great on its own or top off your casserole with guacamole, lettuce, tomatoes, cheese, sour cream, salsa, and serve it with tortilla chips (that is my favorite way to eat it). Don’t want to cook up chicken? You can use canned chicken. In the past, I have used a pint of my home-canned chicken breast or canned chicken from the store. It is a great way to use up leftover chicken. You can add as much or as little veggies as you like. I love corn, so I always add more. You can also make it vegetarian if you don’t add the chicken. Also, make it vegan by not adding meat, sour cream, or cheese. As you can see with the picture below, I mix all the ingredients in the 9×13 baking dish.

Ingredients
3 cups cooked rice
12.5 oz cooked chicken
1 15 oz can corn (or less depending on your taste)
1 15 oz can black beans rinsed/drained
1 cup sour cream
1 cup salsa
1 cup cheese (plus extra for topping)
1 10oz can tomatoes with peppers (Rotel) (I have also just used a can of regular diced tomatoes)
2 T of taco seasoning or 1 packet (more ore less to taste. I like more)
Directions:
Preheat oven to 350°. Mix all ingredients together in a 9×13 dish and top with cheese. Cover for 25 minutes then take off the cover for last 10 minutes. Cook until heated through.

Variations To The Taco Casserole
Make it vegetarian by not adding meat
Make it vegan buy not adding any meat, cheese, or sour cream,
Add fajita style peppers and onions (sauté before adding to the casserole)
Add as little or as many veggies as you like
Serve it with tortilla chips (I love eating it with tortilla chips like a nacho dip)
This is a great way to use leftover rice or chicken

Taco Casserole
Ingredients
- 3 cups cooked rice
