Easy and Delicious Banana Bread

This banana bread recipe is not only delicious but very easy to make. It is perfect for those bananas that you did not have time to eat but you don’t want to throw away. Banana should be a zero-waste product. If you don’t have to make the banana bread when you have overripe bananas then put them in the freezer until you can. Save the peels for compost or feed to your chickens (if you have them).

Freezing Bananas

Take Bananas out of the peel and put 2-3 in a bag or container made for freezing. Then take it out when you want to make the bread. Bananas will thaw pretty fast so there is no need to take them out the day before you use them.

Ingredients:

1 cup sugar

2/3 cup butter

2 eggs

½ cup chopped pecans or walnuts

3 mashed bananas

1 tsp vanilla

2 cups flour

1 tsp baking soda

1 tsp baking powder

Directions

Preheat oven to 300°. Spray and flour your loaf pan. Using a mixer cream together butter, sugar, eggs, bananas, and vanilla. Add in flour, baking soda, and baking powder. After the batter is mixed, add nuts. Pour in a pan (I sprinkle a little sugar on top of the batter) and bake for one hour. After an hour check to make sure it is done by putting a toothpick in the center. If it comes out clean then it is done. If the top seems to be getting too brown, I put a piece of foil on top for the rest of the baking time. Let cool and enjoy!
